Recipe: German Lohplatz – Bacon Potato Cake

Lohplatz is a German dish from Hessen. To be honest I am German and I’ve never eaten or heard of it before. Last friday I had a game night (we played Risk) and I had the chance to eat Lohplatz there. It was delicious so I asked for the recipe. It’s also known under the name Schmiechelskuchen or Salzkuchen.

Basically Lohplatz is a potato cake with rye bread dough as the base and mashed potatoes, quark and sour cream on top. As a finishing touch it is usually topped with poppy seeds, onions and bacon. Sounds good? Then scroll down to get the recipe!

Instructions
  1. Make bread dough (Skip this step if you have bread dough). If you don't: Dissolve yeast (20 gr) in milk (250 ml) and mix with flour (400 g), salt (1 tbsp) and oil (3 tbsp). Knead the dough vigorously and let it rise for 30 minutes in a warm place. Now knead the dough well until it separates from the edge of the bowl, roll it into shape with the rolling pin and spread out on a baking sheet lined with baking paper.
  2. Cook the potatoes for 20 minutes, peel and squeeze or stomp through the potato squeezer. Let the potato cool down for a while.
  3. Gradually add sour cream, eggs and oil until a spreadable mass is obtained. Add milk for a smoother consistency if it's too dense or seems dry. Season with salt and pepper and/or vegetable stock how you like.
  4. Spread the potato mixture evenly over the bread dough.

  5. Sprinkle with the ham cubes, onions, salt and pepper

  6. Bake in a preheated oven on a medium rack at 220 degrees top and bottom heat (circulating air 200 degrees) for approx. 40 minutes. Allow to cool briefly and serve.

Recipe: Turkish Pizza – Lahmacun

I just came home from a Turkish dinner and it was not only very nice but also very tasty. It’s been two month since I’ve last had Turkish food (3,50 € Döner Kebab, I miss you) so I’ve been especially eager all week for today.

Lahmacun is like a turkish pizza. It is a thin piece of dough topped with minced meat, minced vegetables and herbs and then baked in the oven. I often order it like then on its own or with kebab filling.

The first time I had it was in elementary school in Berlin. After having eaten so many Döner Kebabs my mom wanted a change. So one day she came home with Yufka Dürüm instead, which has the same filling as a kebab but instead of the bread you wrap the filling into wither a simple Yufka (basic flatbread) or lahmacun. I can still vividly remember how mind-blowing the taste was for me!

The following recipe is by my Turkish friends and was written by the lovely Silan. Instead of turkish flatbread they just used tortilla wraps which are a perfect lazy substitute!

  1. For the spread: Put just the vegetables together into a food processor or a blender, turn it on.

  2. Add other ingredients and mix everything together. It is supposed to be a bit juicy, if it is not add some water, oil.

  3. Take 2 tsp of the mix and expand it on each tortilla bread, Trick: The top of the tortillas should be as thin as possible and expanded everywhere except the edges

  4. Cook them in preheated oven 175 degrees for 15 minutes.

  5. Top it with tomatoes, onions, cabbage and lemon juice. Thats all! Enjoy!
